Materials
- Rice paper
- Optional fillings can include:
- Lettuce
- Red cabbage
- Cilantro
- Green onion
- Cucumbers
- Carrots
- Avocado
- Peppers
- Rice noodles
- Nori sheets
- Optional dips can include:
- Rice vinegar, soy sauce, coconut aminos, peanut sauce, sriracha, or other hot sauces
- Shallow dish with warm water
- Cutting board
- Knife

Think about the different vegetables you’d like to use for this recipe and enjoy The Vegetable Song.
- Select some of your favorite colorful vegetables and slice them into thin strips. If using rice noodles, cook them according to their package instructions.
- What different colors can you find?
- Fill a shallow dish, like a pie pan, with some warm water and place one sheet of your rice paper in the water. When the rice paper starts to loosen after a second or two, remove it and set it down on a wet cutting board. The paper will still be a bit hard, but will soften as you put ingredients on it.
- How does it feel on your fingers? Slimy? Soft? Sticky?
- Place a few of your veggie strips and noodles onto your rice paper and roll them up into a cylinder. Be careful not to overstuff them! It may take a few tries to make the right shape, rice paper is tricky to work with! It takes a little problem solving.
- Repeat this process to make as many veggie spring rolls as you would like.
